Bikini Recipe

Serves 10 guests

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Citrus Syrup: Combine all the components into a saucepan, bring to a light boil, agitating so the sugar melts. Next, take off the heat allowing it to cool down fully. Decant into an sealable bottle, close it and refrigerate it chilled, where it will keep for up to a month.

To make Cocktail Base: Mix all the liquid ingredients in a large bottle, let it rest for 60 minutes, then pass it through preferably using muslin, making it completely strained.

For serving: Measure 85ml of the premix to a cocktail shaker containing ice, gently stirring gently for one minute to chill. Strain to a frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it with a brief mist of the essential oil over the drink.
